Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 jalapeño, seeded and chopped
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 (15 oz) can black beans, drained
  • 1 (15 oz) can corn
  • 2 (14.5 oz) cans diced tomatoes
  • 4 cups chicken broth
  • 2 cups cooked shredded chicken
  • Salt and pepper to taste
  • Tortilla strips
  • Shredded cheese
  • Fresh cilantro

Instructions

  1. Heat oil in pot, saut onions and garlic.
  2. Add broth, tomatoes, beans, corn, and spices.
  3. Bring to boil then simmer 20 minutes.
  4. Add shredded chicken and cook 5 minutes.
  5. Serve with tortilla strips, avocado, and cheese.
