Ingredients
- 1 tbsp olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 jalapeño, seeded and chopped
- 1 tsp chili powder
- 1 tsp cumin
- 1 (15 oz) can black beans, drained
- 1 (15 oz) can corn
- 2 (14.5 oz) cans diced tomatoes
- 4 cups chicken broth
- 2 cups cooked shredded chicken
- Salt and pepper to taste
- Tortilla strips
- Shredded cheese
- Fresh cilantro
Instructions
- Heat oil in pot, saut onions and garlic.
- Add broth, tomatoes, beans, corn, and spices.
- Bring to boil then simmer 20 minutes.
- Add shredded chicken and cook 5 minutes.
- Serve with tortilla strips, avocado, and cheese.
