Ingredients

  • 1 small avocado, chopped
  • 1/2 tsp black pepper
  • 1 (15 oz) can black beans
  • 1 (10 oz) can tomatoes with green chiles
  • 1/2 tsp chili powder
  • 1 cup cooked quinoa
  • 1/2 tsp cumin
  • 1 (10 oz) can verde enchilada sauce
  • 2 tbsp + 2 tsp chopped fresh cilantro
  • Chopped green onion tops
  • 1 Roma tomato, chopped
  • Salt to taste
  • 2 cups shredded cheese
  • 1 boneless skinless chicken breast, boiled and shredded
  • 1/2 (15 oz) can sweet corn
  • 1/2 tsp white pepper

Instructions

  1. To get started, heat your oven to 350.
  2. Prepare an 8x8 baking dish.
  3. Cook the quinoa according to the instructions.
  4. If you haven't already, boil.
  5. Shred your chicken breast.
  6. Salt to taste.
  7. Mix everything well.
  8. Then pour into the 8 x8 baking dish.
  9. Cover with the last cup of cheese.
  10. Then bake in the oven for 15 minutes.
  11. Remove from oven.
  12. Allow to cool for 5 minutes.
