Ingredients

  • 4 bell peppers, tops cut off and seeded
  • 1 cup cooked quinoa
  • 1 cup black beans
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package.
  2. Mix with black beans, corn, tomatoes, and spices.
  3. Cut tops off peppers, remove seeds.
