Ingredients
- 2 tbsp unsalted butter
- 1 lb sliced sausage
- 1 lb boneless skinless chicken breasts, bite-size
- 1 cup yellow onion, chopped
- 1 cup celery, chopped
- 1/2 cup bell pepper, chopped
- 1 tbsp minced garlic
- 1 cup tomato sauce
- 14.5 oz diced tomatoes
- 2 1/2 cups chicken stock
- 1 1/2 cups rice, uncooked and rinsed
- 2 bay leaves
- 2 tsp ground black pepper
- 1 tsp salt
- 1 tsp white pepper
- 1 tsp dried thyme
- 1 tsp red pepper flakes
- 1/2 tsp sage
Instructions
- Heat oil in a large skillet over medium heat.
- Add chicken pieces, cook until browned.
- Add sausage and cook another 5 minutes.
- Stir in onion, bell pepper, celery, and garlic, saut until tender.
- Stir in rice, broth, tomatoes, and spices.
- Bring to a boil, reduce heat, cover and simmer 20-25 minutes.
- Serve hot with parsley garnish.
