Ingredients

  • 2 tbsp grapeseed oil
  • 2 tbsp coconut oil
  • 7 scallions, chopped (whites and greens separated)
  • 5 cloves garlic, chopped
  • 1 head cauliflower, chopped
  • 3 cups cooked brown rice, cold
  • 2 cups cooked broccoli, chopped small
  • 1 cup frozen peas
  • 3 tbsp reduced-sodium soy sauce
  • 2 tsp toasted sesame oil
  • Toasted sesame seeds (optional)
  • Salt to taste

Instructions

  1. Remove the cauliflower's tough stem.
  2. Reserve for another use.
  3. Using a food processor, pulse cauliflower florets until they resemble rice or couscous.
  4. You should end up with around four cups of "cauliflower rice.
  5. 1T oil in a large skillet over medium heat.
  6. Add garlic.
