Ingredients

  • 2 tbsp unsalted butter
  • 1 lb sliced sausage
  • 1 lb boneless skinless chicken breasts, bite-size
  • 1 cup yellow onion, chopped
  • 1 cup celery, chopped
  • 1/2 cup bell pepper, chopped
  • 1 tbsp minced garlic
  • 1 cup tomato sauce
  • 14.5 oz diced tomatoes
  • 2 1/2 cups chicken stock
  • 1 1/2 cups rice, uncooked and rinsed
  • 2 bay leaves
  • 2 tsp ground black pepper
  • 1 tsp salt
  • 1 tsp white pepper
  • 1 tsp dried thyme
  • 1 tsp red pepper flakes
  • 1/2 tsp sage

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add chicken pieces, cook until browned.
  3. Add sausage and cook another 5 minutes.
  4. Stir in onion, bell pepper, celery, and garlic, saut until tender.
  5. Stir in rice, broth, tomatoes, and spices.
  6. Bring to a boil, reduce heat, cover and simmer 20-25 minutes.
  7. Serve hot with parsley garnish.
