8 large eggs
1/4 cup milk
1/2 cup diced bell peppers
1/2 cup chopped spinach
1/2 cup shredded cheddar cheese
salt and pepper to taste
Preheat the oven to 400F.
Slice cabbage into wedges.
Brush with olive oil, season with salt and pepper.
Roast 25 minutes until edges are crisp.
Chop and toss with vinaigrette before serving.
