Preheat the oven to 350°F.
Add the oatmeal and nuts to the banana mixture and combine thoroughly.
If you want chocolate or carob chips mixed throughout, add them now. Let the dough rest for 10 minutes.
If you prefer the chips on top, add them now. Bake the cookies as directed.
Bake for 20-30 minutes, depending on your preferred doneness, or until golden brown and done.
Remove from oven and let rest on the cookie sheet for 5 minutes, then transfer to a cooling rack.
If you want traditional fork marks, use a pizza cutter or sharp knife to score the tops while still warm. When completely cool, store in a covered container.
